The care and know-how of a family tradition make it one of the most prestigious red wines from Galicia. Via Romana offers the essence of the land where it grows. Manual harvest, followed by destemming and gravity-fed loading into fermentation tanks. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature between 24 and 26ºC, where it remains for at least one year. Finally, malolactic fermentation is carried out to reduce acidity, and it is clarified with pea protein. Before reaching the market, it rests in the bottle, without haste, to achieve a wine made with great care from the vineyard to the bottle. As a result of our commitment to innovation, since 2015 we have been making this wine with a vegetable clarifying agent: pea protein. This is why we have certified Vía Romana Mencía Añada as a vegan wine: the first in Galicia.
