Vía Romana do Camiño Levaduras Autóctonas Mencía Garda is an exclusive wine that reflects the essence of the terroir and the authenticity of Ribeira Sacra. Made solely with hand-selected Mencía grapes from vineyards on steep slopes (terraces), where the predominant slate and granite soil imparts its unique character. Fermentation with native yeasts provides authenticity and a unique profile, making this wine a tribute to the winemaking legacy of Ribeira Sacra. Ideal for pairing with red meats, traditional stews, or aged cheeses.
Tasting notes
Sight
Bright cherry red color, with violet hues that denote its youth and freshness.
Nose
Intense and elegant, with aromas of fresh red fruits (raspberry, cherry) and ripe black fruits (blackberry, plum). Floral, spicy, and balsamic notes are perceived, combined with a subtle mineral background and the delicate toasted touches from barrel aging.
Palate
Silky, fresh and balanced. Smooth, well-integrated tannins stand out, accompanied by a pleasant acidity that brings liveliness. Flavors of red and black fruit blend with spicy and mineral nuances, leaving a long, persistent and refined aftertaste. This wine ferments spontaneously with native yeasts, enhancing the expression of the environment and respect for the region's winemaking traditions. Subsequently, it is aged for 9 months in 500-liter French oak barrels, achieving a balance between freshness and complexity. Before release, it rests in bottle for a minimum of 6 months to refine its character and structure.
